Enchiladas Brancas de Frango

this is one of those dinners that you make and everyone just devours because it’s that good
so let’s make some white chicken enchiladas you can prep your own chicken for this but i’m just
gonna shred the breast meat off of a rotisserie chicken char up some jalapenos peel off the skin
and mince it up really fine until it becomes a paste add that to the chicken along with some
lime juice garlic powder onion powder salt black pepper and mozzarella then add the filling to some
small flour tortillas roll them up and add them in a baking dish and any extra filling i just
stuff into the sides for the cream sauce melt down some butter grate in some garlic and add flour
cook this for a few minutes then pour in your chicken stock whisking until it’s smooth add in
another one of those minced roasted jalapenos and take it off the heat then finish it off with sour
cream cream cheese and white pepper pour this mixture over the enchiladas top it off with some
shredded monterey jack cheese and bake it for about 25 to 30 minutes garnish with green onions
serve it up with some lime and enjoy
